The M. Chapoutier Domaine de Bila-Haut Occultum Lapidem 2019 (Latin for "Hidden Gem") is a powerful and authentic red wine from the unique terroir of the Latour de France appellation in the Roussillon region. This certified organic and biodynamic wine is a complex blend of Syrah (60%), Grenache (35%), and Mourvèdre (5%). The grapes are hand-harvested and aged half in vats and half in oak casks for at least four weeks to integrate its flavors. 

The 2019 vintage presents a deep, dark garnet-red color. The nose is intense, offering complex aromas of blackberry, plum, and black pepper, evolving into sophisticated notes of garrigue (Mediterranean herbs), graphite, leather, and black olives. On the palate, it is full-bodied and robust, with firm, silky tannins and vibrant acidity that leads to a long, persistent, and mineral finish. It is an age-worthy wine (drink 2022-2038), perfect for pairing with grilled steak or duck confit.
