Due to the deep clay soils, the wines produced are rich and expressive (explosive). This richness provides a sensation of moderate acidity, which is why the wine tends more towards the style of Burgundy rather than classic Chablis. It presents notes of peach, citrus, and nutmeg. Over time, the intensity will increase, and the wine will acquire a more distinct Chablis identity. Fermentation occurs with indigenous yeasts, partly in stainless steel tanks and partly in barrels. The average age of the vines is 40 years.
